From Bar Staff to Apprenticeship Manager: Paul Fellows on Building a Career in Hospitality

In a recent conversation on careers in hospitality, Paul Fellows (Apprenticeship Manager at Marston’s) joined us in Derby to share his inspiring journey through the industry. With over 25 years of experience in hospitality and more than two decades at Marston’s, Paul’s story is a testament to the possibilities the sector offers. From working behind the bar to leading the company’s apprenticeship initiatives, his path highlights how accessible, rewarding, and flexible careers in hospitality can be.

Paul Fellows’ Journey in Hospitality

Paul’s introduction to the industry was humble, starting out behind the bar in one of the company’s pubs. Although the role wasn’t initially the right fit, it led to an unexpected but transformative opportunity: a position in the kitchen.

He recalls joining a team that felt like family, who supported him as he learned the ropes, starting with basic tasks like washing pots and cleaning surfaces. “It just felt natural to me,” Paul shared. “I just fitted in.”

His passion and willingness to learn propelled him through the ranks, illustrating how hospitality welcomes people who are ready to grow, regardless of formal qualifications.

Starting with Marston’s as Bar Staff

Paul’s start at Marston’s reflects the open-door culture of the hospitality sector. While many industries focus heavily on formal education requirements, hospitality is a space where skills, attitude, and commitment can take you far.

“There’s none of this ‘you must have A-levels or GCSEs,’” Paul explained. “It’s a practical sector. People can progress without set qualifications, they can gain them along the way.”

This hands-on learning environment allowed Paul to discover new passions, like cooking, and set the foundation for his long-term career.

Apprenticeships and Opportunities in Hospitality

Paul’s transition from chef to Apprenticeship Manager came through embracing opportunities as they arose. After progressing from pot wash to line chef, second chef, and eventually head chef, he built a strong internal reputation. Along the way, he engaged with Marston’s internal training programs, something he now helps others access in his current role.

Hospitality, as Paul highlights, is full of dynamic roles and career paths. Apprenticeships play a major role in this development, offering structured learning, on-the-job training, and opportunities to earn while you learn. For those unsure where to start, an apprenticeship can be a perfect entry point.

Recruitment Opportunities with Marston’s

With over 1,400 pubs, bars, and inns across the UK, Marston’s is always on the lookout for passionate people to join their team. The company offers a wide range of roles, from front-of-house to culinary, management, and head office support.

Paul’s own journey shows how employees can move not just upward in the organisation but across different functions too. Whether you’re fresh out of school, seeking a career change, or returning to work, hospitality offers flexibility and progression.

Supporting Personal and Professional Development

As Apprenticeship Manager, Paul is now on the other side of the training pathway, helping others develop just as he did. Marston’s invests heavily in internal training and career development, with structured programs designed to help staff move from entry-level to leadership roles.

“There’s opportunity to gain qualifications, build skills, and develop personally,” Paul emphasised. It’s not just about learning a job, it’s about building a career.
